    Two-Cheese Potato Hash

    List of Ingredients


    • 2T. oil
    • 1/4c. (1/2 stick) butter
    • 2 pkg. (28oz ea.) frozen hash browns w/ onions & peppers, thawed
    • 1 pkg. (1 oz) dry ranch dressing mix
    • 1c. Parmesan, divided
    • 1c. shredded Mozzarella, divided
    • 8 eggs
    • 4 scallions, thinly sliced
    • Paprika


    Instructions


    1. Preheat oven to 350. Coat 9x13 baking dish with nonstick spray.
    2. Heat oil and melt butter in skillet over high heat. Add hash browns and cook 15-20 minutes or until begin to brown, stirring occasionally.
    3. Remove from heat and add ranch dressing mix, 1/2c. Parmesan, and 1/2c. Mozzarella, mix well.
    4. Spoon into baking dish. Make 8 evenly spaced indentations in potatoes and break an egg into each.
    5. Cover with foil and bake 30 mins. Remove foil and sprinkle evenly with remaining 1/2c. Parmesan and Mozzarella.
    6. Bake 5-6 minutes or until cheese melts. Sprinkle with scallions and serve.
