    How do you prevent cheesecake from cracking?
    A: Although there is no guarantee that your homemade cheesecake won't crack, there are several precautions you can take to keep the cake intact. To begin with, beat the cheesecake batter gently, particularly once the eggs are added. Vigorous beating will incorporate too much air, which will cause the cake to rise and then fall during baking; the cake can easily crack when it falls. Secondly, after the first fifteen to twenty minutes of cooling, loosen the sides of the springform pan and let the cake cool completely; as it cools, it contracts, and releasing it from the pan helps prevent it from cracking. Be careful not to overbake the cheesecake. When checking for doneness, the cake should be set around the sides but still wobble in the very center; the center will firm up during cooling. Some recipes recommend leaving cheesecakes in a switched-off oven with the door ajar to cool very slowly. This is not necessary and will not insure a crack-free cake. If all else fails and the cheesecake cracks, it will still be delicious.
