What's the best way to peel ginger?
A: At the Food & Wine Magazine Classic at Aspen in June, Martin Yan totally wowed the audience by demonstrating how incredibly easy it is to peel fresh ginger with a teaspoon. Simply hold a piece of ginger on a work surface and use the tip of a teaspoon or tablespoon to scrape off the skin in a lengthwise motion, working your way around the piece of ginger. A sharp paring knife or a good vegetable peeler work well too, but Martin Yan's method is definitely worth trying. When buying ginger, be sure to look for firm, smooth roots. If you're lucky enough to find young spring ginger, the skin is usually so tender that it can be left intact.
