    Recipe Introduction


    Old Hoppin John's liked ever-wheres they grow blackeyed or cowpeas. Cooked with hog jowl, ham or bacon, it's good.


    List of Ingredients


    • 1/2 lb. blackeyed or cowpeas
    • 2t. salt
    • 1c. rice
    • 1/4t. bakin soda
    • 1/4lb. cut up pork with fat left in (bacon, side meat, jowl, etc.)


    Instructions


    1. Soak peas overnight, drain, rinse and put in kettle. Cover with boilin water.
    2. Add the soda and bring to a boil. Drain and rinse again. Now put in fresh water and bring to boil, allowing a quart and half water, add the salt and meat bits and cook just at boiling point for close to 4 hours.
    3. Now add the rice and boil 45 minutes longer.
