    Center:
    1 1/4 C. packed brown sugar
    1 C. peanut butter, preferably chunky
    2/3 C. margarine, at room temperature
    1/3 C. water
    2 T. unsweetened applesauce
    1 large egg
    1 t. vanilla extract
    3 C. rolled oats
    1 1/2 C. all-purpose flour
    1/2 t. baking soda Sugar

    Topping:
    1 1/2 C. semisweet chocolate chips
    4 T. vegetable shortening
    1/3 C. chopped nuts (optional)

    Recipe






    For Center:
    Preheat oven to 350° F. Beat together brown sugar, peanut butter and margarine until light and fluffy. Blend in water, applesauce, egg and vanilla. Combine oats, flour and soda, add to brown sugar mixture, and mix well. Shape dough into 1-inch balls. Place on ungreased cookie sheets; flatten to 1/4-inch thickness with bottom of glass dipped in sugar.

    Bake 8 to 10 minutes, or until edges are golden brown.

    For Topping:
    In a heavy saucepan, over low heat, melt chocolate and vegetable shortening; stir until mixture is melted and smooth.

    To assemble:
    Top each cookie with 1/2 teaspoon melted chocolate; sprinkle with chopped nuts, if using. Chill until set. Store in airtight container.
