    Banana Crunch Cake

    List of Ingredients

    • 1/2c. flour
    • 1c. shredded coconut meat
    • 1c. rolled oats
    • 3/4c. packed brown sugar
    • 1/2c. pecans
    • 1/2c. butter, cut in tiny pieces
    • 1 1/2c. bananas, sliced thin
    • 1/2c. sour cream
    • 4 large eggs
    • 1 pkg. moist yellow supreme cake mix


    1. Heat oven to 350. Grease and flour 10 inch Bundt pan. In a bowl, combine flour, coconut, rolled oats, brown sugar and pecans; mix well.
    2. Using fork or pastry blender, cut in butter until mixture resembles crumbs. Set aside.
    3. In another bowl combine banana slices, sour cream and eggs; mix until smooth at med. high speed.
    4. Add cake mix, mix 2 minutes at high speed. Spread 1/2 of batter in greased pan; sprinkle with 1/2 of coconut mixture.
    5. Repeat again, ending with coconut mixture. Bake for 45-50 minutes or until inserted toothpick comes out clean.
