    Chicken Noodle Soup

    about 2 pounds chicken
    3 sprigs fresh thyme
    2 sprigs fresh parsley
    2 bunches green onions
    1 bay leaf
    1 whole, medium carrot
    1 rib celery
    1 TBSP salt
    1 tsp black pepper

    The above ingredients are for the broth.

    Rinse chicken parts, put in large pot & cover with water. Stir in
    salt & pepper then throw other ingredients on top. Bring to boil
    over medium-high heat, cover & reduce heat. Simmer about an hour
    or until chicken is done.

    When done, strain through a colander reserving liquid. Return
    broth to the pot. Let the chicken cool then pick meat off bones
    and add to broth. Discard remaining ingredients.

    Remaining ingredients:

    1 or 2 carrots, diced fine
    1 or 2 ribs celery, diced fine
    1/2 pkg pasta of your choice, broken into 2 inch pieces

    Add diced carrots, diced celery & broken pasta to broth, adding
    more water to cover if necessary. Bring to boil over medium heat
    until pasta is done and carrots are tender. Add more salt & pepper
    to taste.
