    Easy Macaroni and Cheese
    2 cups dry macaroni
    4 slices American Cheese
    a little milk
    a little butter
    salt and pepper to taste
    Cook macaroni according to package instructions. Drain and rinse. Leave the hot macaroni in the pot and put it back on the stove on low heat. Tear sliced American cheese into pot and stir until melted. Add a little milk if thin macaroni and cheese is desired. Add more slices of American cheese if you like it real cheesy.

    Quick Goulash
    1 pkg. Macaroni and Cheese Mix
    1 lb ground beef
    1/4 c. onion
    8oz can tomato sauce
    1/4 c. catsup

    Prepare Macaroni according to directions. Brown beef and onion and drain. Combine all and heat thoroughly. Serves 6 to 8.

    Beef Put Together
    1 tablespoon shortening
    1 lb ground beef
    1 large onion, chopped (1/2 cup)
    1 medium green pepper, coursely chopped (1/2 cup)
    1 #2 1/2 can can tomatoes (3 1/2 cups)
    1 cup rice (quick cooking type)
    1 tsp. salt
    1 tsp. chili powder
    1/8 tsp. pepper

    Melt shortening in a large skillet, add beef and stir occasionally until well browned. Add other ingredients, cover, bring to boil, then simmer for 1/2 hour.

    Easy Broccoli Casserole
    2 boxes chopped broccoli
    1/2 cup butter
    1/2 lb American cheese
    1/2 cup crackers or cornflakes.

    Boil broccoli for 7 or 8 minutes. Drain and set aside. In a saucepan melt cheese with half the butter. Stir constantly, until melted. Pour into buttered casserole over brocolli. Crush crackers and mix with rest of melted butter. Pour over broccoli cheese mixture. Bake at 350 for 20 min.

    Brocolli Casserole
    2 pkg. frozen chopped brocolli, cooked, well drained)
    3 eggs, well beaten
    1 can celery soup
    1 cup mayonnaise
    1 cup grated sharp cheddar cheese
    1 cup buttered cracker crumbs

    Spread cooked brocolli in buttered shallow baking dish. Mix eggs, mayonnaise and soup. Pour over the brocolli covering it completely. Spread on cheese, then top with cracker crumbs. Bake at 350 until brown. I often add a cooked carrot, sliced thin for color to the brocolli.

    Green Bean Casserole with Cheese
    3 pkg. frozen French green beens
    1 can cream of mushroom soup
    4oz can water chestnuts
    1 tbsp. worcestershire sauce
    1 pkg slivered almonds
    8oz Cheez Whiz
    4oz can of mushrooms
    Salt and Pepper to taste

    Cook beans according to directions on package. While beans are cooking mix remaining ingredients except almonds. Drain beans well, and add to other ingredients while beans are still hot. Pour into a 3 quart casserole, sprinkle almonds on top, bake uncovered at 350 for 30 minutes. Yields 10 to 12 servings.

    Potato Casserole
    6 good sized potatoes, boiled, cooled, grated
    1 cup grated American Cheese
    1 can cream chicken soup
    5 or 6 green onions, sliced
    1/2 stick margarine
    1/2 pint sour cream

    Melt butter in saucepan. Add soup and half of the cheese. Stir until cheese is melted. Add sour cream and stir, don't boil, then add onions. Mix and pour over potatoes. Stir until well blended and put in a buttered casserole. Top with rest of cheese. Bake in 350 oven until bubbly and brown, about 30 minutes.

    Easy Chipped Beef
    1 pound hamburger
    1 sm onion chopped - optional
    1 can cream of mushroom soup

    Fry onion with the hamburger and drain. Add the undiluted cream of mushroom soup. Heat through. Serve on butter toast or sliced biscuits on a plate.

    Beef Strips
    4-5 lbs tenderized steak
    1 medium onion, chopped
    1/4 cup chopped green pepper
    1/4 cup chopped celery
    1 cup chopped tomatoes
    1 tablesp worcestershire sauce
    1 tablesp brown sugar
    1 tsp dry mustard
    Dash salt and pepper

    Cut steak into strips. Mix 1/2 cup flour, mustard, salt and pepper. Roll steak in flour mixture, brown in oil. Put in a 2 qt casserol. Mix the rest of the ingredients. Pour over steak and bake in oven at 350 for 1 hour

    Hamburger and Green Bean Casserole
    1 lb. ground beef
    1 sm onion
    2 T fat
    1 tsp salt
    1 can tomato soup
    1 pkg or can of green beens drained

    Brown meat and onion, season, Add soup and beans. Pour into a greased casserole or square pan. 8 1/2 x 8 1/2. Drop biscuit batter by the tablespoon on top. Bake at 425 for 12-15 min. or until biscuits are brown. Add a salad for a complete meal.

    Texas Hash
    Put 3 Tablespoons Crisco or oil in a frying pan.
    Slice 1 large onion and brown it in frypan till yellow.
    Add 2 chopped green peppers and saute.
    Add 1 lb ground beef and brown
    Add 1/2 cup uncooked rice
    2 cups canned tomatoes
    1/2 tsp salt
    1/2 tsp pepper
    a little sugar.

    Bake in a covered dish at 375 1 hr. This is very good and makes a nice casserole.

    Easy Beef and Tater Tot Casserole
    1 lb lean ground beef
    1/2 pkg Liptons onion soup mix
    1 can mushroom soup
    1 package tater tots
    1 cup grated cheese of choice

    Press the raw ground beef in the bottom of a square baking dish. Sprinkle with the Onion Soup mix. Spread the mushroom soup over the top. Place a layer of frozen tator tots on top. Bake for 50 minutes, sprinkle with grated cheese and bake 10 more minutes.

    Bake at 350 for 1 hr. You can double the recipe and use a 13 x 9" baking dish if you have a large family.

    Six Layer Dinner
    3 or 4 sliced potatoes
    1 cup uncooked quick cooking rice
    2 lbs. browned ground beef
    2 med onions, cut up
    1 large green pepper, chopped
    1 16 oz can tomato sauce
    1 16 oz can tomatoes, chopped

    1st layer - sliced potatoes to cover bottom of greased baking dish.
    2nd layer - uncooked rice
    3rd layer - ground beef
    4th layer - onions
    5th layer - green pepper
    6th layer - tomato sauce & tomatoes mixed together
    Sprinkle with salt and pepper.

    Cover with lid or aluminum foil. Bake at 350 for 1 to 1 1/2 hours. Serves 5

    Cabbage Au Gratin
    1 medium head cabbage, coursely chopped
    4 tbsp. butter
    4 tbsp. flour
    2 cups hot milk
    Salt and pepper to taste
    3/4 cup cheddar cheese (mild or sharp)
    3 tbsp. melted butter
    Ritz cracker crumbs & 1 stick of butter

    Cook cabbage in salted water until tender. Put 4 tbsp. butter in skillet, melt and stir in flour. Season with salt and pepper, add hot milk and stir until slightly thickened. Drain cabbage and layer in a buttered dish, alternating with cheese, paprika, and the white sauce. Mix 1 tube Ritz cracker crumbs with 1 stick of melted butter and spread over top of casserole. Bake 15 to 20 minutes at 400 until brown and bubbly.

    Skillet Cabbage
    4 cups sliced cabbage
    2 cups diced celery
    2 chopped tomatoes
    1 green pepper, cut into strips
    2 large onions sliced
    1/2 cup bacon drippings
    1 1/2 tsp salt
    1/2 tsp pepper
    2 tsp. sugar
    No water

    Combine in skillet and cook covered for 10 minutes or until tender.
