List of Ingredients
- 1 cup sifted enriched flour
- 1/4 cup sugar
- 4t. baking powder
- 3/4t. salt
- 1 cup yellow corn meal
- 2 eggs
- 1 cup milk
- 1/4cup soft shortening
Instructions
- Sift together flour, sugar, baking powder, and salt; stir in corn meal.
- Add eggs, milk, and shortening. Beat with rotary or electric beater till just smooth, about 1 minute.(do not overbeat)
- Pour batter into greased 9x9x2 inch pan. Bake in hot oven (425) 20 to 25 minutes. For a tasty variation, top batter with crumbled bacon before baking.
