Cheddar-Potato Bake

Tastes just as delicious when made with Broccoli Cheese Soup or new Golden Corn Soup.
List of Ingredients
- 1 can Campbell's condensed Cheddar Cheese Soup
- 1/3c. sour cream or plain yogurt
- 2T. chopped green onion
- Generous dash pepper
- 3c. stiff, seasoned mashed potatoes
Instructions
- In 1 1/2 qt. casserole, combine soup, sour cream, onion and pepper.
- Stir in potatoes until blended. Bake at 350 for 30 mins. or until hot and bubbling.
- Garnish with shredded Cheddar cheese and sliced green onion, if desired.
- Makes: about 4 1/2 c. or 8 servings.
- Prep time: 10 mins.
- Cook time: 30 mins.
- Crumb-Topped Potato Bake: Prepare Cheddar-Potato Bake as directed above. In small bowl, combine 2T. dry bread crumbs, 1T. butter, melted, and 1/4t. paprika.
- In step 2, sprinkle bread crumb mixture over potato mixture before baking.
- Note: This recipe can be prepared on top of the range. In 2 qt. saucepan, combine soup, sour cream, onion and pepper.
- Stir in potatoes until blended. Over low heat, heat through, stirring occasionally.
