Pepper Steak

Recipe Introduction
Ginger and soy sauce flavor the tender strips of beef and sweet peppers in this Oriental-style dish.
List of Ingredients
- 2T. vegetable oil
- 2c. sweet pepper strips (green,red and/or yellow)
- 1 med. onion, minced
- 1 lb. boneless beef sirloin steak, cut into thin strips
- 1 can Campbell's condensed Beefy Mushroom Soup
- 1T. soy sauce
- 1/2t. ground ginger
- Hot cooked rice
Instructions
- In 10 inch skillet or wok over medium-high heat, in 1T. hot oil, stir-fry peppers, onion and garlic until tender-crisp. Remove; set aside.
- In same skillet in remaining 1T. hot oil, stir-fry half of beef until browned. Remove; set aside. Repeat with remaining beef.
- In same skillet, combine soup,soy sauce and ginger. Return reserved vegetables and beef to skillet. Heat through, stirring occasionally.
- To serve, arrange rice on platter. Spoon mixture over rice.
- Makes: about 5c. or 4 servings
- Prep time: 15 mins.
- Cook time: 15 mins.
- Prepare Pepper Steak as directed above, except substitute 1T. oyster sauce for the soy sauce and 1t. grated fresh ginger for the ground ginger.
