    This can be served immediately or refrigerated overnight and reheated for more flavor.


    List of Ingredients


    • 6-8 medium to large potatoes
    • 1 medium jalapeno pepper
    • 1/2c. diced bell pepper
    • 3/4 stick butter
    • 3/4c. milk
    • 1 heaping tablespoon self rising flour
    • 1 1/2c. grated cheese
    • 1t. salt


    Instructions


    1. Peel potatoes, cut into slices (medium thickness) and boil until slightly tender; drain.
    2. Spread potatoes evenly in 9x13 casserole dish. Saute peppers in butter for 2 mins.
    3. Add milk, salt, flour and 1/2c. cheese; simmer, stirring, until sauce thickens.
    4. Pour sauce evenly over potatoes, then sprinkle remaining cheese over the top.
    5. Bake 30-45 mins. at 350, or until bubbly.
