    Strait-Shootin' Spanish Rice

    List of Ingredients


    • 1c. rice, uncooked
    • 2T. vegetable shortening
    • 1 small onion, chopped
    • 1/2 green bell pepper, chopped
    • 1 1/2 t. chili powder
    • 1 (10 oz) can tomatoes, chopped
    • 2c. water


    Instructions


    1. In a skillet, brown rice in shortening. Add the onion and bell pepper.
    2. Stir. Add salt, chili powder, and tomatoes, including juice.
    3. Add water. Cover and simmer for 30 mins. or until rice is tender and liquid is absorbed.
    4. Makes: about 6 servings
