    List of Ingredients


    • 2/3c. crunchy peanut butter
    • 1 1/2c. unsweetened canned coconut milk
    • 1/4c. fresh lemon juice
    • 2T. soy sauce
    • 2T. brown sugar
    • 1t. minced fresh ginger root
    • 4 cloves garlic, minced
    • pinch cayenne pepper
    • 1/4c. or more chicken broth


    Instructions


    1. Combine the peanut butter, coconut milk, lemon juice, soy sauce, brown sugar, ginger, and cayenne in a saucepan.
    2. Cook, stirring constantly, over medium heat, until the sauce is thick and fairly smooth, about 10 minutes.
    3. Pour sauce into the blender and puree, add the chicken broth to thin as necessary.
    4. Serve with vegetables, pork or chicken.
