List of Ingredients
- 2/3c. crunchy peanut butter
- 1 1/2c. unsweetened canned coconut milk
- 1/4c. fresh lemon juice
- 2T. soy sauce
- 2T. brown sugar
- 1t. minced fresh ginger root
- 4 cloves garlic, minced
- pinch cayenne pepper
- 1/4c. or more chicken broth
Instructions
- Combine the peanut butter, coconut milk, lemon juice, soy sauce, brown sugar, ginger, and cayenne in a saucepan.
- Cook, stirring constantly, over medium heat, until the sauce is thick and fairly smooth, about 10 minutes.
- Pour sauce into the blender and puree, add the chicken broth to thin as necessary.
- Serve with vegetables, pork or chicken.
