    Pork Loin with Garlic & Rosemary

    List of Ingredients


    • 4 cloves garlic, minced
    • 1/2t. dried oregano
    • 1/2t. dried rosemary
    • 1/4t. salt
    • 1/4t. freshly ground pepper
    • 2T. olive oil
    • 1 (3 1/2 to 4 lb.) boneless pork loin, trimmed and tied


    Instructions


    1. Stir and mash together the garlic, oregano, rosemary, salt, pepper and olive oil to make a paste.
    2. Rub all over the outside of the pork loin, covering as completely as possible.
    3. Rotate the pork roast on the spit rods for 1 hr. 15 mins. to 1 hr. 30 mins.
    4. Remove roast, untie and slice into 1/2 inch thick slices to serve.
