Pork Loin with Garlic & Rosemary

List of Ingredients
- 4 cloves garlic, minced
- 1/2t. dried oregano
- 1/2t. dried rosemary
- 1/4t. salt
- 1/4t. freshly ground pepper
- 2T. olive oil
- 1 (3 1/2 to 4 lb.) boneless pork loin, trimmed and tied
Instructions
- Stir and mash together the garlic, oregano, rosemary, salt, pepper and olive oil to make a paste.
- Rub all over the outside of the pork loin, covering as completely as possible.
- Rotate the pork roast on the spit rods for 1 hr. 15 mins. to 1 hr. 30 mins.
- Remove roast, untie and slice into 1/2 inch thick slices to serve.
