    Thai Red Curry Sauce

    List of Ingredients


    • 1T. vegetable oil
    • 2T. prepared Thai red curry paste
    • 1(14 oz) can unsweetened coconut milk
    • 2T. fish sauce
    • 1T. brown sugar
    • 1/2t. salt
    • 2T. minced fresh cilantro


    Instructions


    1. Heat oil in a medium saucepan. Add curry paste and stir and mash into the oil over med.-low heat to warm the paste.
    2. Add the coconut milk and bring to a simmer. Stir in the fish sauce, sugar, and salt.
    3. Taste for seasoning and stir in the cilantro just before pouring over rotated chicken, beef or pork.
