    Toast slices of french bread (or other crusty bread) in olive oil and garlic, then arrange on a cookie sheet. On each slice of bread layer thin slices of zucchini or yellow summer squash, bits of fresh basil, tomato slices and top with a slice of provolone cheese.Bake at 350 degrees for 5 to 10 minutes until cheese is melted.

    Make a lot of these because they are delicious and go quickly!

    A quick luncheon variation is to toast slices of hearty bread in the toaster, place on a cookie sheet and layer crisp bacon, tomato slices, and a slice of cheese (mozzarella is good). Bake at 350 until cheese is melted.
