Garlic/Parmesan Sauce For Pasta

Olive Oil
Garlic
Fresh Parmesan/Romano
Milk/Cream
Place olive and Garlic (this can be as much or less as is desired for taste) in saute pan.....until Garlic is aromatic....Do not brown!
Add freshly grated parmesan or romano cheese (cover bottom of pan until one layer of white). Cook slightly, then add Milk/Cream (I even use skim milk and it comes out fine) apx. 1/2 cup (you can vary on the amount). Cook down until you see the sauce becoming a rich cream like texture. Add pasta
You can vary on this theme any way you want. One of my favorites is adding grilled chicken, roasted red peppers and artichokes. But really anything can go into it. Pasta with roasted pine nuts and parsley is another favorite side dish.
Play with it until you get the right consistency and to your personal flavor.
