    Baked Beans with Green Chilies

    List of Ingredients


    • 1 1/2c. dried navy beans
    • 1/2c. pinto beans
    • 6 slices bacon, diced
    • 1 med. sliced onion
    • 1/4c. packed brown sugar
    • 3T. molasses
    • 1t. salt
    • 1 1/2t. mustard
    • 1/8t. pepper
    • 3 green chilies, roasted and diced


    Instructions


    1. Preheat oven to 300.
    2. Use your favorite method to tenderize beans or according to pkg. directions. Drain and reserve liquid.
    3. In a large skillet brown bacon until crisp. Remove bacon and remove all but a T. of grease.
    4. Saute onion in skillet.
    5. In 2 qt. ungreased casserole dish, add beans, onion, and bacon. Stir in brown sugar, molasses, salt, mustard, pepper, chilies and 1c. of the reserved liquid.
    6. Then add the remaining reserved liquid or water to almost cover ingredients.
    7. Cover and bake 3 1/2 to 4 hours. Remove cover for the last 30 mins. of baking.
    8. If beans look dry during cooking, stir.
