Cheesy Vegetable Casserole

- 1/2 lb . American cheese
- 1/2c. butter
- 1 (16 oz) bag frozen vegetable blend thawed and drained
- 1c. crushed butter crackers
Instructions
- Cut cheese into cubes. Place in a saucepan with 1/4c. butter.
- Heat over medium heat until melted and smooth, stirring often.
- Place vegetables in a 1 qt. casserole dish. Pour cheese mixture over and mix well.
- Melt remaining butter. Stir in cracker crumbs. Sprinkle over top of casserole.
- Bake uncovered at 350 for 20-25 mins. Serve at once.
