    List of Ingredients


    • 2 lb. unpeeled Idaho potatoes , cut in 3/4 inch cubes
    • 1/2c. chopped onion
    • 1T. butter
    • 1c. chopped bell pepper
    • 1t. paprika
    • 1t. Lawry's seasoned salt
    • 1/2t. black pepper
    • Tabasco to taste
    • 3/4c. grated Monterey Jack cheese
    • 3/4c. grated Cheddar cheese


    Instructions


    1. Boil potatoes until soft. Preheat oven to 350. In skillet saute onions in butter until translucent.
    2. Add bell pepper and saute until soft. Transfer to a bowl and mix with potatoes, paprika, salt and pepper and serveral drops Tabasco.
    3. Put mixture in greased 8x11 oven proof dish and bake until potatoes begin to brown about 20 minutes.
    4. Sprinkle with cheese and return to oven briefly until cheese melts.
    5. Serves 8-10
