Cottage Potatoes

List of Ingredients
- 2 lb. unpeeled Idaho potatoes , cut in 3/4 inch cubes
- 1/2c. chopped onion
- 1T. butter
- 1c. chopped bell pepper
- 1t. paprika
- 1t. Lawry's seasoned salt
- 1/2t. black pepper
- Tabasco to taste
- 3/4c. grated Monterey Jack cheese
- 3/4c. grated Cheddar cheese
Instructions
- Boil potatoes until soft. Preheat oven to 350. In skillet saute onions in butter until translucent.
- Add bell pepper and saute until soft. Transfer to a bowl and mix with potatoes, paprika, salt and pepper and serveral drops Tabasco.
- Put mixture in greased 8x11 oven proof dish and bake until potatoes begin to brown about 20 minutes.
- Sprinkle with cheese and return to oven briefly until cheese melts.
- Serves 8-10
