Ham Hock with Navy Beans

- 4(1/2 lb. ) ham hocks, scored
- 3T. olive oil
- 1c. minced yellow onions
- 1/4c. minced celery
- 1/4c. minced bell pepper
- 1/2t. crushed red pepper flakes
- 1/4t. dried oregano
- 1/4t. thyme
- 2 bay leaves
- 2T. minced garlic
- 1 lb. navy beans (soaked overnight & drain)
- 8c. chicken stock
- 1t. salt
- 1/4c. minced parsley
- 1/2c. minced green onion
Instructions
- Saute ham hocks, onion, celery, bell pepper, pepper flakes, oregano, thyme, bay leaves for about 5 mins.
- Add garlic and saute 1 min. Add stock and bring to a boil. Reduce heat and simmer 1 1/2 hours.
- Add beans and stir. Simmer for 45 mins. to 1 hour. Season with salt and pepper and cook 15-30 mins. until beans are done and ham hock falls apart.
- Remove. Serve ham hocks with beans, sprinkle with parsley and green onion.
