    Orzo with Parmesan and Basil

    List of Ingredients


    • 2T. butter
    • 1c. uncooked orzo pasta
    • 1-14 oz can chicken broth
    • 1/4c. chopped fresh basil
    • 1/2c. freshly grated Parmesan cheese
    • salt and pepper to taste
    • 2T. fresh basil sprigs or flat leaf parsley


    Instructions


    1. Melt butter in heavy skillet over medium high heat. Stir in orzo and saute until lightly browned.
    2. Stir in chicken broth; bring to a boil. Cover, reduce heat, and simmer until orzo is tender and liquid is absorbed, about 15-20 mins.
    3. Mix in chopped basil and Parmesan cheese. Season with salt and pepper.
    4. Transfer to a shallow bowl. Garnish with basil sprgs or parsley. if desired.
    5. Yield: 4 servings
