    List of Ingredients


    • 3T. butter
    • 1 med. onion, finely chopped
    • 2 1/2c. thinly sliced mushrooms
    • 1T. tomato paste
    • 3 1/2c. chicken broth
    • 1 lb. skinless, boneless chicken breast halves
    • 2c. thin egg noodles
    • 1/2t. salt
    • 1/2t. pepper
    • 1/4c. chopped fresh parsley


    Instructions


    1. In a large saucepan, warm the butter over med. heat until melted. Add onion and saute until softened, about 5 mins.
    2. Add mushrooms and saute until softened, about 5 mins.
    3. Stir in the tomato paste, chicken broth, and 1c. water, bring to a boil over med. high heat.
    4. Meanwhile, cut the chicken on the diagonal into 1/2 inch wide strips.
    5. Add to the pan with the noodles, salt and pepper.
    6. Reduce the heat to med. low, cover, and simmer for about 8 mins., stirring occasionally, until the chicken is cooked through and the noodles are tender.
    7. Stir in the parsley.
