List of Ingredients
- 3T. butter
- 1 med. onion, finely chopped
- 2 1/2c. thinly sliced mushrooms
- 1T. tomato paste
- 3 1/2c. chicken broth
- 1 lb. skinless, boneless chicken breast halves
- 2c. thin egg noodles
- 1/2t. salt
- 1/2t. pepper
- 1/4c. chopped fresh parsley
Instructions
- In a large saucepan, warm the butter over med. heat until melted. Add onion and saute until softened, about 5 mins.
- Add mushrooms and saute until softened, about 5 mins.
- Stir in the tomato paste, chicken broth, and 1c. water, bring to a boil over med. high heat.
- Meanwhile, cut the chicken on the diagonal into 1/2 inch wide strips.
- Add to the pan with the noodles, salt and pepper.
- Reduce the heat to med. low, cover, and simmer for about 8 mins., stirring occasionally, until the chicken is cooked through and the noodles are tender.
- Stir in the parsley.
