Hot Shot Potato Soup

List of Ingredients
- 5 lb. potatoes, peeled and diced
- 1/2c. grated celery
- 1/2c. grated carrots
- salt and pepper to taste
- butter
- 1/4c. onion flakes
- 1/4c. parsley flakes
- milk
Instructions
- Combine potatoes, celery, and carrots in a large pot. Add just enough water to keep it from sticking.
- Cook until tender. Add salt, pepper, butter, onion flakes, and parsley flakes.
- Let sit for about 5 minutes (so onion flakes can soften)
- Mash potatoes in the water and add milk until it reaches the thickness you desire.
- Serve with salad and hot, hard bread.
- Makes: 10-12 servings.
