    Leeky Chicken Stew

    2 skinless chicken breasts, cut into 3 large pieces each
    2 Tbsp olive oil
    1 leek, halved lengthwise and sliced into one inch pieces
    3 small potatoes
    6 large mushrooms, cut into thick slices
    1/2 cup dark beer
    1/4 cup soy sauce
    2 Tbsp sesame oil

    In fry pan with lid, brown chicken in 1 Tbsp olive oil for 3-4
    minutes and set aside. Inside it should still be uncooked. Brown
    leeks in remaining olive oil 2 minutes. Add potatoes and mushrooms
    and brown 2 minutes. Add beer, soy sauce and sesame oil and deglaze
    pan. Arrange chicken on top of vegetables and cover. Reduce heat.
    Simmer 20-25 minutes till potatoes are tender. Uncover, mix well,
    add freshly ground black pepper.
