    Ginger Glazed Carrots

    List of Ingredients


    • 2T. butter, divided
    • 3/4c. water
    • 1 lb. whole baby carrots
    • 1/4c. honey
    • 2T. orange juice
    • 1t. ground ginger
    • 1/8t. ground nutmeg
    • 1/2t. parsley


    Instructions


    1. Place 1T. butter and water in skillet. Add carrots, cover and cook over med. heat 6-8 mins. or until carrots are slightly tender. Drain.
    2. Combine honey, orange juice, ginger, nutmeg. Pour over carrots and add remaining 1T. butter.
    3. Cook 5-6 mins. stirring frequently to glaze carrots. Sprinkle with parsley just before serving.
