    SMART DESSERTS FOR SWEET HEARTS

    Source of Recipe

    internet

    Recipe Introduction

When the sweet tooth strikes, fix a no-regrets dessert using low-fat ice cream and cake
along with these homemade sauces. None of the desserts here have more than 200
calories or 3 grams of fat; each sauce makes about 1 cup and keeps (refrigerated) at least a
    week.

    * Berry Sauce. Thaw a 10-oz package of frozen raspberries in lite syrup. Puree in a food
processor or blender with 1/4 tsp vanilla.

    * Berry Cream. Whisk smooth 1/4 cup nonfat sour cream. Stir into Berry Sauce (above).

    * Cocoa Sauce. Mix 2/3 cup each unsweetened cocoa powder and sugar in a small
saucepan. Add 1/3 cup water. Whisk until boiling. Add 2 tsp vanilla. Chill.

    * Vanilla Cream Stir 1/4 cup nonfat sour cream and 1 Tbsp brown sugar until sugar
dissolves. Gently stir in one 8-oz carton nonfat vanilla yogurt.

    * Cappuccino Cream Add 1 tsp instant coffee powder with the brown sugar to Vanilla
    Cream (above).

    Raspberry Sherbet

Cut a 1/2-inch-thick slice rainbow sherbet from a 1/2-gallon brick. Cut into a heart. Place
on serving plate and freeze until hard. Outline heart with raspberries. Spoon 1 Tbsp
Cocoa Sauce in a heart shape in the middle.

    Pear Shortcake

Toast a thin slice of fat-free poundcake, then cut into a heart. Top with 2 Tbsp Berry
Sauce, a sliced, peeled and cored fresh pear half and 1 Tbsp Vanilla Cream sprinkled
    with cinnamon.

    Banana Heart

Toast a frozen low-fat waffle. Cut waffle into a heart. Shape 1/3 cup nonfat cottage
cheese into a heart shape on top. Top with 9 thin slices banana and 1 tsp honey. Spoon 2
    Tbsp Berry Cream around waffle.

    Orange Heart

Cut 2 low-fat cinnamon graham crackers in half diagonally with a serrated knife. Round
off wide ends of triangles. Place 2 next to each other on a serving plate to form a heart.
Spread with 3 Tbsp Cappuccino Cream. Top with remaining triangles. Chill 4 hours or
until crackers soften. Arrange orange segments on top. Drizzle an arrow using 1 Tbsp
    Berry Sauce.

    Strawberry Angel

Cut two 1/2-inch- thick slices plain or chocolate angel food cake into heart shapes.
Sandwich with 1/4 cup fat-free ice cream and freeze. Before serving, drizzle 1 Tbsp each
Cocoa Sauce and Berry Cream on plate. Place heart on top and garnish with a strawberry
    half.
