    Mesquite Grilled Jack Rabbit

    • one fresh jack rabbit
    • mesquite chips
    • fire


    Instructions


    1. Catch a fresh jack rabbit around December. Clean and piece rabbit; place on grill over slow coals.
    2. Add mesquite chips to the fire. Put a lid of some kind over the rabbit and cook slowly for 1/2 hour or so.
    3. Turn halfway through. it will get a real good smoke flavor that way. Don't over cook .
    4. Rabbits have very little fat and will dry out quickly.
