    TURTLE SOUP #2

    1 med. turtle (2 lbs. meat)
    1 cup onion, chopped
    1 bay leaf
    1 green pepper, diced
    3 tbsp. flour
    2 hard boiled eggs, sliced
    2 tbsp. shortening
    2 stalks celery
    1 sprig thyme
    4 tbsp. tomato paste
    1 qt. hot water
    1 cup wine
    Salt
    Pepper
    1/2 lemon

    Cut turtle eat into pieces. Fry in shortening until brown. Add onion, celery, bay leaf, thyme, green pepper, tomato paste, salt, pepper, and flour. Stir well. Add water and simmer for 1 to 1 1/2 hours. Remove from heat and add wine. Serve with sliced egg and lemon in each bowl of soup.
