2 pounds fresh peaches (about 8 med peaches)
1 cup water
1/2 cup sugar
1 cinnamon stick, broken
1 Tbs whole cloves
1 tsp whole allspice
2 Tbs brandy or 1 tsp almond extract

Bring a large pot of water to a boil. Using a small paring knife, cut
an "X" in the bottom of each peach. Drop peaches into boiling water
for 30 seconds; transfer to ice water using a slotted spoon. Peel the
peaches starting at the "X". Cut each peach in half and remove the
pits. In a large saucepan, combine water, sugar, cinnamon stick,
cloves and allspice. Bring mixture to a boil over high heat; reduce
heat to low and simmer until thickened and syrupy, about 5 min.
Gently drop peaches into syrup; cover saucepan. Bring to a boil over
high heat; reduce heat to low and simmer, stirring constantly, until
peaches are tender, about 10 min. Add brandy and cook 1 min longer.
Transfer peaches to large serving bowl using a slotted spoon. Using a
fine mesh sieve, strain syrup to remove spices and pour syrup over
peaches.
