    List of Ingredients


    • 1 1/2 cups sugar
    • 1/2 cup butter
    • 2 eggs, beaten
    • 1 teaspoon vanilla
    • 1 cup crushed pineapple, undrained
    • 3 1/2 cups flour
    • 1/2 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cups chopped nuts (optional)


    Instructions


    1. Heat oven to 350 degrees
    2. Cream together sugar and butter
    3. Add eggs, vanilla, and pineapple and continue to mix
    4. Sift dry ingredients together and gradually add to creamed mixture
    5. Stir in nuts (optional)
    6. Drop by teaspoon onto greased cookie sheet
    7. Bake 10-12 minutes
    8. Mix remaining pineapple juice and powdered sugar to make an icing consistency
    9. Ice cookies when cooled
