List of Ingredients
- INTO A LARGE BOWL:
- 2 c all purpose flour
- 11/4 c white sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- STIR IN:
- 2 c grated carrots
- 1 c. raisins that have been soaked in Brandy at least 4hrs., best if overnight
- 1/2 c coconut
- 1 appled, peeled, cored, and grated
- IN BOWL BEAT:
- 1 c salad oil
- 2 tsp. vanilla
Instructions
- Stir egg mixture into flour mixture til batter is just combined. Spoon into well greased miffin tins, filling to the top. Bake 350 for 20 - 25 min. Maked approx. 20.
