    Fancy Egg Blossoms with Hollandaise Sauc

    This recipe makes one serving. Increase recipe to make as many blossoms as needed. The hollandaise sauce is sufficient for two servings. Increase this recipe if you intend to make three or more egg blossoms.

    List of Ingredients




    To make Blossoms:


    Cut 3 five inch square sheets of filo pastry, individually brushed with melted butter and place one over the other in a prepared fluted form or large Texas style muffin tin.
    Shredded smoked gouda cheese
    One slice of Canadian ham cubed
    Fresh spinach stemmed and shredded (not pre-cooked).
    One large whole egg

    Melt butter and brush each filo square, placing one on top of another in prepared pan or form. Place shredded cheese inside on the bottom of the filo nest you have created. Place the ham on top of the cheese and then place the spinach on top. Make an indentation in the spinach and break the egg carefully into the nest without breaking the yolk. Season with salt and pepper. Bake egg blossoms in pre-heated 350 degree oven on center rack for exactly 18 minutes. Remove from oven and let set for 5 minutes. Meanwhile, make fresh hollandaise sauce.

    Hollandaise Sauce:
    2 egg yolks
    1 tablespoon fresh squeezed lemon juice and whip together in small sauce pan. Add 1/2 stick of butter cut into pieces. Stir constantly over low heat until sauce thickens. Remove from heat.

    Take egg blossoms out of pan carefully with small knife and set on serving plate. Pour hollandaise over the egg blossom and then sprinkle lightly with paprika. Criss-cross two chives over the top and serve.
