    Captain Ron Viola Clam Fritters

    List of Ingredients




    2 egg yolks, well beaten
    1/2 cup of milk
    1/2 teaspoon of instant minced onion
    Two 6 1/2 ounce cans of minced clams, drained
    1 cup of fine dry bread crumbs
    1 tablespoon of snipped fresh parsley
    1 teaspoon of salt
    3/4 teaspoon of pepper
    1/4 teaspoon of dried thyme leaves, crushed
    2 egg whites, stiffly beaten
    Crisco shortening or Crisco oil for shallow frying
    Orange or lemon slices (optional)

    Combine egg yolks, milk and onion in large bowl. Let it stand 5 minutes. Stir in clams, bread crumbs, parsley, salt, pepper and thyme. Fold in the egg whites. Heat 1/4 inch Crisco shortening or Crisco oil to 365ºF. in deep skillet. Drop batter by tablespoonfuls, a few at a time, into shortening or oil. Fry until golden brown. Turn once. Garnish with orange or lemon slices, if desired. Makes 6 servings.
