    1 onion, coarsely chopped
    1/4-1/2 cup diced luncheon meat: turkey, ham, or mixed (optional)
    4 eggs
    1 cup cottage cheese
    1/4 cup butter or margarine, melted & cooled
    1/4 cup all purpose flour
    1/2 tsp baking powder
    1/2 tsp salt
    1/4 tsp fresh ground pepper
    2 cups shredded cheese
    1/4-1/2 cup diced green chilies or salsa of your choice
    olive oil

    Recipe



    1. Preheat Oven to 350F
    2. Sauté onion in olive oil until golden - about 5 min. Add lunchmeat
    and sauté until slightly browned.
    3. In a large bowl, beat eggs until thick and lemon colored. Stir in
    cottage cheese, butter, flour, baking powder, and salt & pepper.
    4. Add cheese, chilies, onion, and meat - stir until just combined.
    5. If serving as a main dish,
    pour egg mixture into a greased 9-inch pie plate, or other suitable
    baking dish.
    Bake 350F until edges lightly browned and center feels firm with
    lightly pressed (about 35 min).
    6. If making appetizers
    spoon into tiny (abt 1-inch) muffin pans, about 1.5 tbsp egg mixture
    per pan
    Bake in 350F oven until firm (15-18 min)
