Use thinly-sliced Genoa salami (press slices between paper towels to try to remove some of the grease). Spread each slice of Genoa with Philadelphia cream cheese which has been brought to room temperature and mixed with garlic powder (to taste). Roll each slice into a cornucopia (or cone) shape and secure with a toothpick. Place a sprig of fresh parsley or a piece of pimento into the cream-cheese center of each roll-up. Arrange in a circular patter on a doily-covered tray or plate. These look good with at least two layers, stacked on top of each other.
