Pineapple Cheese Ball

Two 8-oz cream cheese
8 1/2 oz can of crushed pineapple
1 cup chopped pecans
1/4 cup chopped green pepper
2 tablespoons chopped green onion
1/2 teaspoon salt
1 cup chopped pecans (total of 2 cups)
Recipe
Drain crushed pineapple. Mix all ingredients except last 1 cup of chopped pecans. Form into ball. Refrigerate. Roll in remaining 1 cup of finely chopped pecans. Serve with assorted crackers.
For a more elaborate setting, form into small "cake" shape by pressing into a small cake pan. "Ice" the cake of cheese with softened cream cheese. Decorate with tinted cream cheese and pecans.
