    2 cups brown rice, cooked
    1 cup white rice, cooked
    1/3 cup black olives, pitted and chopped
    3 tablespoons minced onion
    1/4 teaspoon salt
    1/2 teaspoon thyme
    1/2 teaspoon of sage or poultry seasoning
    Pinch of black pepper
    Pinch of oregano
    2 tablespoons minced fresh parsley
    3/4 pound sweet sausage, lightly fried with the onion
    2 eggs

    Recipe



    Combine all the ingredients less one egg for wash. Mix thoroughly. Chill the mixture for an hour or so. Then prepare cooking oil for deep frying and a light water and egg wash along with a flour and corn meal batter. Using a small scoop of your hands, separate and roll golf ball size portions of the rice mixture. Place each one in the batter, then to the egg wash and back to the batter. Fry until golden brown. Remove to paper towel. Cool and enjoy.
