    Stuffed Cherry Tomatoes

    24 Cherry tomatoes, stemmed
    6 bacon slices, cooked, drained and crumbled
    1/2 cup finely chopped green onion
    1/2 cup mayonnaise
    Fresh parsley for garnish

    Place tomatoes, stem-side down, on cutting board (I cover it with paper towel for better drainage.) Cut a thin slice from the top of each tomato. Using small spoon, scoop out the tomato pulp; discard. Turn the tomatoes over on the paper towels to drain. Ina small bowl, combine the other ingredients and spoon into tomatoes (or using a pastry bag, you can fill each tomato). Cover and chill about 2 hours. Garnish with parsley, if desired.

    Variation:
    1 package (8 oz) cream cheese, softened
    2 teaspoons Dill weed
    2 teaspoons milk
    Dill sprigs for garnish
