    Club Soda Matzoh Balls

    ( a Jewish dumpling made from matzoh meal,
    traditionally served in chicken soup- These are light and fluffy! )


    1 cup matzoh meal
    1 tsp salt
    dash. black pepper
    4 large eggs
    1/3 cup melted margarine or shortening
    1/2 cup club soda ( carbonated water )


    Combine dry ingredients. Blend in eggs and margarine. Stir in club soda. Cover and chill 1 hour. Form into small balls ( golf ball size or smaller 1 inch size. ) with wet hands. Drop into boiling chicken soup or water. Cover and cook gently boiling for at least 25 minutes or more. Do not lift cover to peak. They will triple in size and be soft and fluffy throughout. You can test one after 25 minutes.
    Note: these can be cooled and frozen in the soup or removed and frozen and thawed for later use.
