    Hot to Trot Hush Puppies

    Serves 2-4 ( about 3 dozen hush puppies )

    2 cups self-rising cornmeal
    1 cup self-rising flour
    ½ teaspoon salt
    2 tablespoons sugar
    3 eggs-beaten
    ½ cup milk
    1 - 1 lb. can creamed corn
    1 1/2 cup shredded cheese ( I prefer sharp cheddar )
    1 large onion, skinned & chopped
    2-4 jalapeno peppers, cleaned and finely chopped
    vegetable or olive oil

    In a large mixing bowl blend the cornmeal, flour, sugar, and salt.

    In a second bowl combine the eggs and milk. Add to the dry mix and blend until evenly moist. Stir in the corn, cheese, onion, and peppers, careful, do not over mix. In a deep frying pan pour the oil to a depth of 2 inches and heat to 375 – 400 degrees.

    Using a large rounded tablespoon carefully drop the batter into the hot oil. Don’t fry too many at once. After about 3-4 minutes when they are a golden brown remove and drain on a paper towel. Repeat until all the batter is used.
