    10 scallops
    10 slices pancetta (a little more than 1/2 pound)
    Freshly ground black pepper
    4 to 6 ounces Gorgonzola cheese

    Line baking sheet (about 12 x 15 inches) with parchment paper or foil. Preheat oven to 450 degrees F.

    Place the pancetta rounds in single layer on prepared baking sheet. Place scallop in center of each pancetta round; grind a bit of black pepper over each scallop. Top each with about 1/2 to 3/4 teaspoons Gorgonzola cheese.

    Bring/fold up sides of pancetta to enclose scallop/cheese; twisting slightly at top to resemble 'purse' or 'bag'. (Note: some will open slightly as they bake - but this is to be expected.)

    Bake in 450 degree F oven about 8 to 10 minutes until hot and bubbly.

    Great appetizer. You can line a serving plate with greens and place them atop - and scatter some grape tomatoes and kalamata olives around - and maybe a few rosemary sprigs.
