    Chevy Chase's Barbecued Chicken

    Makes 8 servings.

    4 tbsps. peanut oil
    2 tbsps. chopped fresh ginger root
    1/4 cup chopped scallions
    2 cloves garlic, chopped
    1/3 cup soy sauce W/1 tbsp. sugar
    1 tbsp. sesame oil
    17 chicken thighs or 3 lbs. chicken, cut-up

    In a small skillet or saucepan, heat peanut oil until hot. Add ginger, scallions and garlic. Stir-fry for 1 minute. Add sesame oil. Marinate chicken pieces in this mixture for 1 or 2 hours. Remove chicken from marinade and barbecue or broil until golden brown. Baste with marinade; turn pieces over and cook until done.
