    Hawaiian Sesame Albacore

    4 albacore steaks, each about 1/2 pound
    8 slices bacon
    8 tablespoons butter
    6 tablespoons fresh lemon juice
    1/4 cup dry sherry
    1/4 cup sesame seeds
    lemon wedges

    TERIYAKI MARINADE

    1/3 cup soy sauce
    1/4 cup dry white wine
    4 tablespoons butter, melted and cooled
    2 tablespoons sugar
    3/4 tablespoon grated fresh ginger
    1 garlic clove, crushed to a paste

    Combine the marinade ingredients and mix well. Wash the albacore steaks and dry them with paper towels. Place the steaks in a shallow dish, pour in 1/2 cup of the marinade, cover and refrigerate for 1 hour.

    Wrap each piece of fish with 2 bacon slices, and fasten the bacon with wooden picks. This not only keeps the fish neatly together but also adds extra flavor and juiciness. As soon as the fish begins to cook, the meat firms, and can be easily handled.

    In a small pan, melt the butter and remove it from the heat. Stir in the remaining marinade, the lemon juice and the sherry. Arrange the fish on the grill rack over medium-hot coals. Brush them well with the butter mixture.

    When the steaks are done on one side, sprinkle them with sesame seeds, turn them over, and cook them until the other side is brown. Baste the fish again with the butter mixture and sprinkle them with the remaining sesame seeds.

    Before serving, turn the steaks over once more to toast all the seeds. The total barbecuing time should be about 15 minutes. Garnish with lemon wedges.
