    1 med. dried chipotle pepper
    2/3 cup honey
    1/3 cup ketchup
    1/4 tsp. fresh ground pepper
    1/3 cup chili paste - (Kind you get at Asian market-Lan Chi chili paste with garlic is very good.)
    3 Tbsp. fresh lime juice
    1/4 tsp. salt
    2 sides of spare ribs at about 3lbs each

    *(Two ingredients can be changed if need be. I use fresh jalapenos INSTEAD of chipotle and I use 1/3 cup of corn syrup and 1/3 cup of molasses INSTEAD of honey.)

    Recipe



    1. Soften the chipotle in boiling water for 10 minutes. Discard stem and chop fine.

    2. In a medium bowl combine the chipotle, honey, chili paste, ketchup, lime juice, black pepper and salt.

    3. Reserve 1/2 of this sause for table or tailgate service with ribs.

    4. Lightly coat the grill rack with vegetable oil and heat to medium.

    5. Grill the ribs six inches above the heat about 25 minutes.

    6. Turn ribs over and brush the tops with barbecue sause. Continue brushing with the sause and occasionally turning until ribs are browned, flexible when lifted with tongs and cooked through, about another 30-40 minutes longer.

    ** Watch for flare ups. Heat reserved sause and pig out. Not for the faint of tastebuds!
