    1 (4 pound) boneless pork sirloin roast, trimmed of excess fat
    4 cloves garlic
    2 tablespoons dark brown sugar
    2 teaspoons dried thyme leaves
    1/2 teaspoon cayenne pepper
    1 teaspoon black pepper
    Salt to taste
    Barbecue Sauce (recipe follows)


    Preheat the oven to 325 degrees. Make slits in roast. Cut the garlic into slivers and stuff the slits in the roast.

    In a small bowl, mix together the brown sugar, thyme, cayenne pepper, black pepper and salt. Pat the sugar mixture all over roast, place in a roasting pan, cover and bake for 3 hours or until pork is very tender and the internal temperature is at least 160 degrees. (You may also cook the pork in a smoker).

    Using two forks, pull the pork apart into shreds. Spoon the desired amount of Barbecue Sauce over meat, and toss to combine. Serve with extra Barbecue Sauce.

    Barbecue Sauce:
    1/2 cup chopped onion
    1 (15-ounce) can tomato sauce
    1 (12-ounce) jar chili sauce
    1/3 cup dark brown sugar
    3 tablespoons cider vinegar
    2 teaspoons ground thyme leaves
    1 teaspoon ground allspice
    1 1/2 teaspoons ground dry mustard
    Salt and pepper to taste

    Coat a medium pot coated with nonstick cooking spray, and set over medium heat. Add the onion, and cook, stirring, until tender, 3 to 5 minutes. Add the tomato sauce, chili sauce, brown sugar, vinegar, thyme, allspice, dry mustard and salt and pepper to taste. Bring to a boil, reduce heat, and simmer for 10 to 15 minutes. Remove from heat and serve.

    Makes 10 to 12 servings.
