    The $50,000 Grilled Beef Steak

    4-8 oz. New York Strip Steaks (all fat and sinew removed)
    Steaks: Combine ingredients. Marinate steaks 2 hours in refrigerator. Grill steaks medium rare, then slice thinly on a bias.

    Coconut Marinade:
    1/2 Jalapeno pepper minced
    6 cloves garlic, chopped
    2 shallots, chopped
    7 tblsp. olive oil
    2 1/4 tsp. curry powder
    3/4 tsp. salt
    1 1/4 cup cilantro leaves
    1 cup coconut milk
    4 1/2 tsp. brown sugar
    3/4 tsp. tumeric
    1/2 tsp. black pepper

    Peanut-Crusted Potato Cake:
    10 oz. peeled Idaho potatoes
    2 cloves garlic
    2 tsp. brown sugar
    2 egg yolks
    1/4 cup onion, minced
    4 tblsp. butter
    3 oz. heavy cream
    seasoned flour

    Potato Cakes:
    Boil potatoes. Drain and rinse. Caramelize onion and garlic in butter and brown sugar. Combine with potato. Add heavy cream and egg yolks. Form into four 2 oz. cakes. Coat with seasoned flour. Beat the egg and milk for the egg wash. Dip cakes into egg wash, then coal with chopped peanuts. Pan fry in vegetable oil.

    Egg Wash:
    1 egg
    1 cup milk
    chopped peanuts
    vegetable oil

    Greens and Lemon Vinegerette:
    1 tblsp.+1 tsp. sherry vinegar
    1 tblsp.+1 tsp. grated fresh ginger
    1/4 tsp. black pepper
    4 fresh or dried kaffir lime leaves, minced
    3/4 cup cooking oil
    4 cups Asian greens
    1 1/2 tblsp. fresh lime juice
    2 tblsp.+2 tsp. minced lemon grass
    1 1/2 tsp. minced Jalapeno
    1 tsp. brown sugar
    2 tblsp. Asian sesame oil
    1 head Belgian endive
    2 tsp. grated lime zest

    Salad:
    Combine all ingredients except oil, greens and endive. Add oil, emulsifying slowly while whisking. Dress greens with Vinegerette.

    Plate Presentation:
    Place potato cake at the back of each plate. Divide greens into four portions and place in the center of each plate. Layer grilled steak slices over the greens.
