    Recipe Introduction

To serve up a real soda fountain feeling, use a glass seltzer bottle, tall glasses and long spoons to present these refreshing drinks and don’t forget the straws!

    List of Ingredients

    For the Chocolate Egg Cream
    1/4 cup chocolate syrup
1/2 cup very cold whole milk
    2/3 cup chilled seltzer

    For the Strawberry Malted
2 small scoops strawberry ice cream (about 1/4 pint)
3/4 cup cold whole or low-fat milk
    2 tablespoons strawberry syrup
    2 tablespoons malted milk powder

    For the Classic Lime Rickey
    crushed ice
    1/4 cup lime syrup
2 tablespoons freshly squeezed lime juice
    2/3 cup chilled seltzer

    Each recipe makes 1 drink

    Making the Egg Cream
    1. Pour chocolate syrup into bottom of a chilled soda glass; gently stir in milk. Holding the seltzer bottle about 6 inches from the top of glass, slowly pour seltzer into the glass until a thick foam reaches the top of the rim.

    2. Using a long-handled spoon, stir the mixture once quickly, making sure the foam does not bubble over the rim. Add a straw; serve immediately.

    Making the Malted
    1. In a blender, combine strawberry ice cream, milk, syrup and malted milk powder. Blend mixture until thick and smooth, about 1 minute. Pour into a tall glass. Place a long-handled spoon in the glass.

    2. Garnish with a fresh strawberry if desired. Serve immediately.

    Making the Classic Lime Rickey
    1. Fill a tall glass with crushed ice. Add lime syrup and juice. Slowly pour in seltzer to fill the glass. Using a long-handled spoon, stir gently.

    2. Garnish with fresh lime if desired. Serve immediately.
