    Banana Creme Stuffed French Toast

    4 large, 1 inch thick slices Italian bread
    4 ounces cream cheese, softened
    1/4 tsp. vanilla
    1/2 cup banana, mashed
    2 eggs
    1/2 tsp. vanilla
    1/2 cup milk
    3/4 cup chopped pecans
    1/4 cup sugar
    1 Tbsp. cinnamon
    1/8 tsp. nutmeg
    2 Tbsp. EXTRA VIRGIN OLIVE OIL
    olive oil spray

    Recipe



    1. Cut pocket horizontally in each slice of bread, cutting from top crust to almost bottom crust.

    2. In a small bowl mix until thoroughly blended, the cream cheese, 1/4 tsp. vanilla and the banana. Spread the mixture into each pocket of bread.

    3. On a sheet of wax paper mix the pecans, sugar, cinnamon and nutmeg.

    4. Grease a baking sheet with the olive oil.

    5. Dip stuffed bread into egg mixture, then coat with the nut mixture ensuring to coat all sides of bread. Place stuffed bread onto prepared baking sheet. Spray or brush the side facing up with the extra virgin olive oil or spray.

    6. Bake at 450 degrees for about 10 minutes or until golden brown and crisp. Turn over and bake an additional 5 minutes or until golden brown and crisp. Enjoy plain or with your favorite maple syrup.

    Serves 4
